About Us

I love to cook and I am a hot sauce fanatic! I've tried a lot of them out there and after either overpaying for bland red-colored vinegar, or trying sauces so hot my tongue went numb for days, I set out to create the perfect hot sauce.

Happy Dogs is my own unique blend of habenero and cayenne peppers and seasonings, meant to enhance the flavor of your foods and recipes giving them just the right kick without overpowering them.

I hope you enjoy my sauce as much as I have enjoyed creating it with YOUR GOOD TASTE IN MIND!!!

Sincerely,

Patrick Gilmore

Just in case you are wondering why I put our dogs on the label because they were our pride and joy! They sadly are no longer with us, but now they are immortalized on the label of my hot sauce. Every time I look at the bottle, I still have very happy memories of those remarkable animals we loved so much! They were all very happy dogs! We spoiled them rotten, and they were in a class by themselves, just like my hot sauce is to this day! I also one day plan as the business grows, to start a foundation helping animal shelters with proceeds. All in good time.

Description of my sauce;

Happy Dogs Hot Sauce is a unique blend, with fresh garlic, (not powder), with aged red savina habanero and cayenne peppers, blended in such a way to enhance the full flavor of the foods and recipes its put on without overpowering them. Anyone can make a sauce scorching hot. I strive to put my emphasis on flavor more so than heat, although it does have some kick. On a heat scale of 1 to 10, I would give about 6 or 7 on the heat scale. As far as flavor goes, I don't think you can beat it on the largest variety of foods, I think it is the most variable sauce on the largest variety of foods! Try it on everything from pizza to catfish, (my two personal favorites), stews, soups, chilies, eggs, on and on…

The four- color label is very family-friendly, and yes they are our dogs making it very appealing to dog owners and dog lovers alike. And in case you wonder, I made this sauce strictly for human consumption (although sometimes a little gets on their leftovers, they don't seem to mind.

Patrick's Sweet n Happy Hot Wings

These are NOT your traditional buffalo-style hot wings.. they are A LOT BETTER!!!!!

  • Ten pounds wings, cut up
  • 1/2 cup your favorite bbq rub, my fave is howlin dogs wild spice blend, www.howlindogspice.com, to find out where it's sold, but use what you like.
  • 1- 5 oz. bottle Happy Dogs Hot Sauce
  • 1- stick (preferably) unsalted butter
  • 1/2 cup honey
  • 1/2 cup molasses

Mix wings in rub, and let let sit from 3 hours to 24 hours. When your ready to cook, heat my hot sauce, honey, and molasses in pot. Deep fry wings untill golden brown. When done frying, drain grease, and dip in pot with mixture, then set in cookie sheet in oven at about 225 to keep them warm while you fry the rest of the wings. You can also grill the wings, and use the hot sauce mixture as a bbq sauce. I hope you enjoy these as much as I do. They are definitely my favorite on the wing scale!!!

Enjoy, Patrick

Dr. Hause's recipe

Dr. Wayne Hause has been a brilliant veterinary specialist for a very long time. His breakthroughs, and discoveries have astounded many in the field of veterinary medicine. He also is the primary caretaker of our beloved dogs. In addition to all of these wonderful attributes, he is also a phenomenal cook, who generously donated the following recipe to me to use on my site. Please try it. It's AWSOME!!!

  • 4 Medium zucchini
  • 1/2 or 1 large sweet onion
  • Garlic Salt
  • Black pepper
  • 4 medium sized tomatoes, peeled and seeded
  • 30 to 40 fresh basil leaves
  • 1 t salt
  • 1/2 t fennel seeds
  • 1 t oregano leaves
  • 2 to 3 garlic cloves
  • 1 t Happy Dogs
  • 1 cup fresh grated Parmesan (the good stuff)

Cook onions and zucchini in olive or canola oil until starting to become soft. Dust with garlic salt and black pepper. Blend tomatoes and spices in blender until smooth. Add to zucchini and onion and simmer for 5 to 10 minutes. Just before serving, add the Parmesan cheese.

Chef Jason's Wings

This recipe comes from one of my best friends in the whole world, Jason Cunningham.

I met Jason about fifteen years ago in St Louis. We were both musicians playing the club circuit, and after several discussions and beers later I discovered we had a lot in common, including a love of cooking. Jason still plays music, and is a professional chef in Phoenix AZ.

He gave me this recipe, and after you try it, you'll need no other!!!!!

Note: For all you low-carb dieters out there, you don't have to use breading to deep fry, but I prefer it because it soaks up more of my yummy sauce!

Breading recipe

  • 1 - cup flour
  • 2 - tbs. baking powder
  • 1 - tbs. garlic powder
  • 1 - tbs. cayenne pepper
  • 1 - tbs. black pepper

Or if you're in a hurry, use a brand called Andy's hot "n" spice chicken breading, 10 oz. pkg., if they have it in your local store.

You'll also need:

  • 12 to 24 drummys, or whole wings
  • 2 quarts peanut oil
  • 1 cup Happy Dogs Hot Sauce
  • 1/2 stick of butter
  • You won't need salt, it's in the sauce.

Preheat oil to 375. Preheat oven to 350. Wash and pat dry drummetts or wings. Melt butter in hot sauce, and simmer. Add wings and breading in large baggy and shake until wings are covered. Shake off any excess breading and carefully drop ½ of the wings in pre-heated oil. Fry 12 to 15 minutes, or until golden brown. Remove with slotted spoon and drain briefly on paper towels. (Don't give the wings time to cool). While oil is heating back up, briefly sauté fried wings a few at a time in the sauce mixture until covered then onto a baking sheet, or just place all the cooked wings at once onto baking sheet, and brush generously with sauce mixture. Place in oven 10 to 15 minutes, while you fry up the remaining batch of wings. Then just repeat the procedure with the last batch of wings to the oven, while you DEVOUR the first half!!! Serve with ranch or blue cheese dressing and celery and your favorite beverage. Enjoy!!!

To your good taste!

Pat's Happy Steak

Once you try this simple recipe for grilling a steak, you won't use anything else!!!

You will need:

  • Charcoal or gas grill. You can use the oven broiler, or blacken on stovetop, if you wish, but my personal favorite is a very hot charcoal fire.
  • Your favorite cut of beef steak. (I'm partial to a thick and juicy porterhouse).
  • Some Old Bay seasoning
  • And of course, Happy Dogs Hot Sauce!!!

A friend of mine turned me on to a rub called Howlin Dogs's Wild Spice Blend. It comes out of Grafton IL. If you can find it, use that instead of Old Bay seasoning. Their website is: www.howlindogspice.com, to find out where they carry it.

On one side of steaks, sprinkle with a decent coat of Old Bay, or Howlin Dogs, then liberally put my hot sauce over that, take a fork, and stab seasonings and sauce into the meat . Then, turn over and do the same to the other side.

Let the meat sit for about 20 minutes or until the charcoals are at their hottest point.

Cook steaks on very hot grill to your liking.

If you like blackened steak, here's how to do it.

In a cast iron or old skillet heat up butter (1/4 to ½ stick depending on size of pan), very hot, throw in steak and cook as fast as you can and turn over and do the same thing to the other side. It's an excellent way to do steak indoors. However, open a window or two or turn the exhaust fan on, because it can get real smoky in the kitchen, but once you try it you'll know it was worth it!

Happy Dogs Hot Sauces #1 fan Melelani

This is Melelani, a very wonderful person that brought me some peppers at a food demo I was doing at Whole Foods Market in St. Louis MO. She gave me the peppers, and told me how much she was totally in love with the sauce. I gave her my last pink t-shirt as I should for my newly appointed #1 fan!! Her father sent me these pictures, and I had to put them on the site, after all, she is the #1 fan of the sauce. Thanks for the peppers, I made salsa with them and it was fantastic!

Here's what our #1 fan's father has to say about her ...

Happy Dogs is Melelani's favorite sauce. Melelani makes breakfast and lunch for her family to take to work or school each day. Unless it's peanut butter and jelly, Mele always puts Happy Dogs on our sandwiches. It really adds a nice flavor. Her lunches always have zing. Mele also sets the table for us for dinner, and she always includes Happy Dogs with the condiments she sets out, mostly because she likes it so much herself. She always asks if the meal has habaneros in it. If the answer is "no", she reaches for the Happy Dogs.
